Whenever summer rolls around, many of our gardens are bursting with fresh fruit and vegetables that taste ten times as good as anything from the grocer. Throughout the years some of our favorite garden staples have been strawberries and rhubarb. They’re deliciously sweet, easy to grow, and make a darn good summer pie!

Here is one of our all-time favorite summer recipes for experiencing the joy of growing your own strawberries and rhubarb. This strawberry rhubarb pie recipe is delicious, tart, and contains the perfect combination of flavors for summertime sweetness. Just pick your own strawberries and rhubarb, bake a fresh pie, and enjoy the delicious splendor of your garden!


  • 9-inch pie crust
  • ½ cup of sugar
  • ½ cup of all-purpose flour
  • 2 pints fresh rhubarb, sliced into quarter-inch pieces
  • 2 pints of fresh strawberries, washed with the tops removed, and quartered.
  • 2 tbsp butter
  • 1 egg yolk


Preheat oven to 400 degrees.

In a large bowl, combine the flour and sugar. Set the bowl aside.

Next, add rhubarb and strawberries and toss with the flour and sugar.

Let mixture stand for 30 minutes.

When the fruit mixture filling is ready, roll out the bottom crust and place into a 9-inch pie plate. Scoop pie filling into the pie plate!

Cut 2 tablespoons of butter into small pieces and lay those pieces on the top of the pie filling.

Place the top crust over the pie, and crimp the edges of the crust together with a fork.

In a separate bowl, beat the egg yolk. Using a pastry brush, apply a thin layer of egg yolk on the top of the pie, and sprinkle with sugar.

Cut slits in the top of the pie to let moisture out while baking.

Bake for 35-40 minutes, or until the pie is golden brown and bubbling.

Serve with a scoop of vanilla ice cream!

A Note on Eliminating Moisture

We cut slits in the pie crust to let moisture out while baking, because strawberries and rhubarb carry a lot of water. If you want a drier pie, consider creating a lattice top or cobbler-style pie. Each is delicious!
